Ingredients

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 5 tomatoes

  • 2 potatoes, peeled and diced

  • 5 cups vegetable broth

  • 1 tablespoon ground cumin

  • 1/2 lime, juiced

  • 1 (15 oz) can black beans, drained

  • 1/2 cup cilantro, chopped

  • salt and pepper to taste

Preparation

Step 1


In a large pot, sauté onions in oil over medium high heat until tender.



Step 2


Add garlic and tomatoes, cook for 2 minutes, stirring often.



Step 3


Add potatoes. broth, cumin, and lime juice. Bring to a boil, then reduce to simmer for 30 minutes or until potatoes are cooked.



Step 4


Add beans, cilantro, spinach, salt, and pepper. Simmer until heated through.
